About

About me

I’m Rachel McIntyre. A big fan of cooking, running and my dogs; Bert the Golden Retriever and Mishka the rescue. I’m based in Newcastle, UK. Welcome to my blog!

I’m currently studying towards a Masters in Clinical Nutrition (accredited with the Association for Nutrition, AfN) with the University of Aberdeen and I hold a BSc in Psychology. Prior to beginning my nutrition studies I was a teacher in South Korea for four years and I helped run my husband’s photography business.

Through my travels and living abroad I’ve found a love for experimenting with different ingredients and I’m happiest in the kitchen trying out new recipes. Korean food has become a firm favourite of mine. I’ve also taken cooking classes in Spain and learned about home-cooked favourites in Indonesia.

My other passion is running. Especially 10k and cross country races. I enjoy figuring out which foods are best for fuelling me on my runs and in training.

I also believe that rather than just fuel, food should be about making you feel good about yourself and should “spark joy” (in the words of Marie Kondo)! Nothing is off the menu for me, all things in moderation.

On this blog I will be sharing evidence based nutrition tips, new things I’m learning as I progress in my masters and my favourite recipes. I hope you enjoy it!

As nutrition research is ever-evolving, please feel free to let me know if you notice any inaccuracies on my website due to emerging evidence or have any comments.
