This sauce is the ideal accompaniment to my Banana and Oat Pancakes, making the perfect weekend breakfast or brunch. The compote is also delicious added to yoghurt, porridge or on toast. To make things even better, it’s so simple to make and is a great way of getting your dose of healthy berries.
Mixed Berry Compote
Tangy and sweet sauce
Equipment
- small saucepan
- wooden spoon
Ingredients
- 400 g (4 cups) frozen or fresh mixed berries
- honey (to taste)
- ½ tsp cinnamon
Instructions
- Add all of the berries into the saucepan and put on a medium heat. You may want to add a tablespoon or two of water if using fresh berries so it doesn't dry out.
- When everything starts bubbling, give it a stir and reduce to a low-medium heat. Let it cook down for about 10 minutes. Stirring it and mashing up the fruit every so often.
- Take it off the heat and add the cinnamon and honey. I usually add about 1-2 tbsp of honey, but it depends how tart the fruit is and how sweet you like it.
Notes
This should keep in an airtight container in the fridge for about 3 days.
